Ginger Bread

Ginger Bread

Its beginning to smell a lot like Christmas with this amazing Ginger bread that really sets the mood with notes of molasses, nutmeg, and cinnamon. 

Looking to make something sweet and savory for your holiday gathering this is it! 

Here is what you need:

Ingredients 

  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Cloves
  • 1 1/2 tsp Ginger
  • 3 tbsp Molasses
  • 2 tbsp Lemon juice
  • 1 cup Applesauce, unsweetened
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/3 cup melted coconut oil
  • 2 tsp vanilla extract
  • 1/2 tsp nutmeg
  • 1/2 cup of almond milk or sub milk of choice
  • 1/2 cup of maple syrup or agave,
  • 1/4 cup of organic cane sugar or coconut sugar,
  • 1 cup 1/2 of organic flour
  • Icing : 3/4 cup powder sugar and 2-3 tbsp of water or Cinnamon Sugar Sprinkle: Cinnamon and raw cane sugar

Directions 

Preheat over to 375*, In a large bowl add in all wet ingredients, (cooled, melted*) coconut oil, vanilla extract, almond milk, maple syrup, molasses, lemon juice, apple sauce give good mix. In another bowl add in dry ingredients, salt, baking powder, baking soda, cane sugar, cloves, cinnamon, ginger and nutmeg, Give dry ingredients a good mix than add to wet ingredients. Blend or mix ingredients together while slowing adding in flour , blend up to 2 min or mix until smooth consistency, lightly grease loaf pan and pour batter into pan. Let Bake for 35-40 mins. When done let sit additional 15-20 mins to cool before adding icing on top.

Icing : Blend or mix powder sugar and water until consistency becomes smooth or you can go with the cinnamon sugar sprinkle, if so, I would suggest coating the top of the bread loaf with melted coconut oil than sprinkle on cinnamon sugar sprinkle, you can also get fancy and do both like I did.
